Southern Potato Salad
6-8 large potatoes
4-5 heaping tbsp. mayonnaise
2 tbsp. mustard
1 med onion, diced
1 red bell pepper, diced
1 stalk celery, sliced into thin wedges
4 lg. kosher pickles, diced
salt and pepper to taste
Peel
potatoes, cut into bite size bieces, and boil for about 5 min., or
until tender but not mushy. Rinse boiled potatoes in cold water to
cool. Add potatoes to a large tupperware or glass bowl. Add mayonnaise
and mustard. Blend enough to coat potatoes. Add next 4 ingredients, and
blend into potato salad. Add salt and pepper to taste. Best if let sit
in refrigerator overnight.
