Lemon Cheese Pie 

Recipe of Louisa Evans Rust 1830-1892 

1/2 cup butter

1 1/2 cups sugar

1 teaspoon flour

1/8 teaspoon salt

2 tablespoons sweet milk

1 lemon, juice and grated rind

3 whole eggs, slightly beaten

     Soften butter to room temperature. Cream with sugar. Add flour and mix well. Mix in eggs and other ingredients. Pour into unbaked pie shell. Bake in 325 degree for 45 to 50 minutes. 
Caution: Over-mixing of filling will cause it to separate into two layers.
 


Louisa James Evans Rust, 1830-1892 

     Louisa James Evans was born, October 15, 1830, in Mecklenburg, Virginia. She was the daughter of Allen B. Evans and Martha Westmoreland Glover. In 1833, her family moved to Maury County, Tennessee and settled near Culleoka. Around 1844, the family move d to Wayne County, Tennessee. Louisa Evans married James H. M. Rust, October 3, 1849. The Civil War interrupted the family life of this couple. Several stories have been passed down through the generations of the conflict that the homestead found itsel f contending with as the battles were fought nearby. James Rust served in Biffle?s Nineteenth Tennessee Cavalry under the command of General Nathan Bedford Forrest.
     The Evans women were very skilled seamstresses and Louisa learned these skills, passing them down to her daughter and granddaughter. A picture of her granddaughter on her wedding day is a prize possession of this family. The granddaughter had made her w edding dress. She was 16 years of age at the time.
