Knox Fruit Pie

(M. Miratti)

1/4 cup cold water

1./2 cup orange juice

1/4 cup crushed pineapple

2 envelopes Knox gelatin

1 banana sliced, 2 if small

1/2 cup sugar

1/2 cup boiling water

1/4 tsp. salt

2 tbsp. lemon juice

1/2 cup whipped cream

1 egg white, beaten stiff and dry

Pour cold water in bowl. Sprinkle gelatin on top of water. Add sugar, salt, hot water and stir until dissolved. Add fruit juices. Cool when mixture begins to congeal, beat with egg beater. Fold in banana, pineapple whipped cream, egg white. Pour in graham cracker pie crust that has been chilled.

Pie Crust:
1 1/2 cup crushed graham crackers

1/2 cup powdered sugar

1 cube butter, softened

Mix and pat into pan.
