Potato
Pancakes
(Bryon Block)
Use yesterdays left over mashed
potato’s (hopefully 4 servings worth) dice a medium onion, shred
½ pd of cheddar or Colby. Mix with potato’s. Add salt and pepper to
taste. Mix in enough flour to firm up the mixture. About 1 cup. Grease pan
with bacon grease. Mash pancakes and fry. (coating your hands with oil to
keep the mixture from sticking toy your hands.) Serve with applesauce.
