TENNESSEE POUND CAKE
>From the kitchen of Alma Mae Sloan Ervin


Alma graduated in the top ten of her class from Vonore High School. After graduating she attended Hiwassee College and the Univ. of Tenn where she received a Bachelor of Arts degree in education. She taught school at Monroe, Blount, Roane Counties.

1 1/2 cups oil 1 cup walnuts, chopped
4 eggs 2 1/2 cups self-rising flour
2 cups sugar 8 1/4oz can crushed pineapple w/juice
3 tsp cinnamon

Preheat oven to 325 degrees. Grease and flour a tube pan. Set aside Cream together oil, eggs and sugar. Add rest of ingredients. Blend well. Pour mixture into pan and bake for 1 hr and 20 minutes or until cake tests done. Add glaze when cake is baked and cooled.

GLAZE
1/2 cup butter
1 cup brown sugar
1 tsp vanilla
3/4 cup evaporated milk

Mix in saucepan and cook over medium heat ,stirring constantly, till thickened. Pour over cooled cake.

AUNT IDA'S APPLE CAKE
>From The Kitchen of Ida Kate Moser


Ida Kate was the great-great granddaughter of Monroe Co Pioneer, Francis Moser. Ida Kate died in 1997 at age 85.

2 eggs 1tsp baking soda
1 cup brown sugar 1 tsp cinnamon
1 cup white sugar 2 tsp vanilla
1 1/4 cups oil 3 cups flour
1/2 tsp salt 3 cups apples, peeled and diced
1 cups walnuts or pecans chopped


Preheat oven to 350 degrees. Beat eggs; add sugars and oil. Beat this mixture for about 3 minutes. Add dry ingredients. Mix well. Add apples, nuts and vanilla. Grease and flour a tube pan. Bake for 1 hour or until cake tests done.

TEA CAKE COOKIES
>From The Kitchen of Ella Moser Ervin


Ella was the gr-gr granddaughter of Monroe Co Pioneer, Francis Moser. She was married to Manes Ervin and was the mother of nine children. Ella would make these cookies for her children when they got home from school.

1/2 lb butter 1/2 cup sugar
1/4 tsp salt 1 tbs vanilla
2 eggs
1/2 tsp baking soda
3 1/4 cups plain flour
1/2 cup packed brown sugar


In a large bowl combine all ingredients and blend well. Roll out on a floured surface like for biscuits and cut into small circles with glass. Put on baking sheet and sprinkle with some white sugar before baking. Bake at 350 for 10-12 minutes.
